Mussels From The Oven

INGREDIENTS

  • 500g clean fresh mussels

  • 4 x large tomatoes diced

  • 3 x garlic cloves sliced

  • 1 x red chilli (hot) finely chopped

  • 1 x bunch parsley finely chopped

  • Olive oil

  • Salt

METHOD

  • 200°C – 250°C medium flame

  • Heat olive oil in pan and place near the door of the oven, when oil is hot add mussels (be careful) cover with lid for 45 seconds.

  • Remove lid adding garlic, chilli, olive oil, and salt for a minute then add the tomatoes and continuing cooking for a further 5 minutes until all the mussels are open and sauce is reduced.

  • Serve with fresh parsley and crispy bread.
