500g clean fresh mussels
4 x large tomatoes diced
3 x garlic cloves sliced
1 x red chilli (hot) finely chopped
1 x bunch parsley finely chopped
200°C – 250°C medium flame
Heat olive oil in pan and place near the door of the oven, when oil is hot add mussels (be careful) cover with lid for 45 seconds.
Remove lid adding garlic, chilli, olive oil, and salt for a minute then add the tomatoes and continuing cooking for a further 5 minutes until all the mussels are open and sauce is reduced.
Serve with fresh parsley and crispy bread.
